Paleo adventures .. Salmon w/ avocado & lime puree

So after being in Hawaii I am CRAVING fish in my diet.  So … let the experimenting begin:

Salmon

  • Season w/ VERY LITTLE Celtic sea salt & pepper
  • cook in pan with coconut oil (skin side up first) w/ lid.  [get a small piece < .5 pound to make easier to cook and appropriate for 1, albeit a hungry 1]
  • Flip that salmon after some cooking progression is happening, and then cook roughly double on second side

While this is happening make fun avocado puree:

  • 1/2 an avocado and smash it up (super ripe is best here)
  • Add tomatos (whatever kind you have .. I did grape > which btw are NOT grapes according to my daughter)
  • Add lime (a bit of juice and some inside )
  • Add celtic salt A TINY BIT
  • Cayenne and Cummin

Done with this …

Bring together for awesomeness.  I also did this with spaghetti squash .. bake it… rock it.  eat it (1/2 a small one for one person … which btw is ALSO not spaghetti according to daughter).

DEFINITE Do again.. clearly I thought to much salt, hence the warnings above …
