Simple gluten free waffles!

I wanted to try this type of waffles, but the online recipes are 5+ ingredients long. That seemed silly when I already had the Red Mill pancake mix.

So, I used this mix but switched out the vegetable oil for coconut oil, and a few waffles I added the dairy/nut/soy free mini chocolate chips.

Awesome meal. Eat quickly or reheat to enjoy as it can get less delicious over time. I also topped with strawberries because they are awesome and loved by Loren.
